Nicola Gatta Cuvée Nature, N/V The Hamptons and MuscatThis wine is made from 80% Chardonnay and 20% Pinot Noir. It is declassified Franciacorta due to the holistic biodynamic approach Nicola takes with his vines. Vinification takes place by spontaneous fermentation in a mix of stainless steel and cement, and the wine spends 30 "moons" on its lees (2. 5 years). The vineyards never see any chemical treatments, and instead are filled with biodiversity; olive trees, blackberry trellises and native herbs grow
